another year around the sun & a GARGY PARGY breakfast to celebrate my birthday!!! a giant version of my protein pancakes + the most decadent pink mousse + birthday cake cookie dough balls (WHAT?!?!). omg just too much fun & deliciousness, while of course putting my signature healthy spin on it! blow out the candles & let's celebrate 🥳🎉

  1. in a food processor, combine all ingredients for pink avocado mousse; refrigerate to allow to thicken.
  2. make a batch of my delicious birthday cake protein cookie dough balls.
  3. in a skillet, reheat pancake by “toasting” for 1-2 minutes on each side.
  4. remove pancake, then add pink avocado mousse, birthday cake protein cookie dough balls, & sprinkles + if it's your birthday, add some candles & make a wish!
  5. serve with any other sides you like - I had a chomp's jerky stick & blueberries for the ultimate delicious birthday breakfast.
