Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 350.
- in a food processor, add folk revival grain-free hot cereal & blitz into a flour.
- in a bowl, combine folk revival flour, baking soda, & salt.
- in a separate bowl, whisk together egg, greek yogurt, & water.
- stir liquid into dry ingredients to make muffin cup crust.
- to a silicon mini muffin tin, using a small cookie scoop, add muffin mixture to muffin tin.
- press down the center of each muffin with the back of the cookie scoop; bake for 9-11 minutes.
- clean cookie scoop, then once done baking, again press center of each mufiin with the back of the cookie scoop.
- while muffins are completely cooling, make protein salty lemonade mousse by adding all ingredients to a food processor; refrigerate until muffins are cooled.
- once muffin cups are cooled, add a scoop of protein salty lemonade mousse to each cup.
- add freeze-dried blueberries & lemon zest on top.
- melt white chocolate chips, then drizzle on top of each bite (I melted the chocolate, then added to a small zip lock bag. then cut a tiny hole in the corner & pipe onto each bite).
- allow to harden in the fridge or freezer & enjoy!
