Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat oven to 350.
  2. in a food processor, add folk revival grain-free hot cereal & blitz into a flour.
  3. in a bowl, combine folk revival flour, baking soda, & salt.
  4. in a separate bowl, whisk together egg, greek yogurt, & water.
  5. stir liquid into dry ingredients to make muffin cup crust.
  6. to a silicon mini muffin tin, using a small cookie scoop, add muffin mixture to muffin tin.
  7. press down the center of each muffin with the back of the cookie scoop; bake for 9-11 minutes.
  8. clean cookie scoop, then once done baking, again press center of each mufiin with the back of the cookie scoop.
  9. while muffins are completely cooling, make protein salty lemonade mousse by adding all ingredients to a food processor; refrigerate until muffins are cooled.
  10. once muffin cups are cooled, add a scoop of protein salty lemonade mousse to each cup.
  11. add freeze-dried blueberries & lemon zest on top.
  12. melt white chocolate chips, then drizzle on top of each bite (I melted the chocolate, then added to a small zip lock bag. then cut a tiny hole in the corner & pipe onto each bite).
  13. allow to harden in the fridge or freezer & enjoy!
