upon receiving, I instantly had recipe ideas! drum roll please… introducing the most incredible version of chicken & waffles. here's what awaits you: a waffle version of my protein pancakes + the most delicious waffle cone meatballs (um what?!) of your life + a fancy mixed berry compote (feel free to sub any syrupy goodness) + top it with your GORGEOUS waffle cone granola clusters & berries. GO GET YOUR GRANOLA!!!
Ingredients
protein waffles
- greek yogurt protein pancakes & waffles (click for recipe), 1 batch, made into 6 waffles
mini chicken & waffle cone meatballs
- 1 lb1 lb1 lb Ground Chicken
- 4 - 64 - 64 - 6 easy baked bacon (click for recipe), crumbled
- 0.25 cup0.25 cup0.25 cup Cottage Cheese
- 2 oz2 oz2 oz Back Porch Paleo Waffle Cone Granola - Nana Joes
- 0.25 cup0.25 cup0.25 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto
- 1 Tbsp1 Tbsp1 Tbsp Breakfast Blend - Primal Palate
mixed berry compote
- 0.25 cup0.25 cup0.25 cup Blueberry Superfood Jam - Smash Foods, or any berry flavored jam
- 1 cup1 cup1 cup Frozen Mixed Berries
- 0.25 cup0.25 cup0.25 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Flour, mixed in a little water
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Water

protein waffles
- follow the instructions for my greek yogurt protein waffles.
- heat a waffle iron to low-medium heat, then cook for ~3-4 minutes or until waffles are crisp.
mini chicken & waffle cone meatballs
- preheat oven to 400.
- first add waffle cone granola to a food processor & blitz a few times into a finer crumble.
- to a bowl, add granola & remaining meatball ingredients.
- using a small cookie scoop, make mini meatballs (36-42).
- place meatballs on a lined baking dish, then bake for 12-15 minutes.
mixed berry compote
- to a sauce pan, add all compote ingredients & bring to a boil.
- reduce sauce to a simmer for 10-15 minutes or until in thickens.
building your waffles
- to a waffle, add meatballs, mixed berries, waffle cone granola, & top with berry compote.
