caramelized tropical guacamole ahi tuna tostadas
dip into a tropical oasis with this sweet caramelized guacamole! it is truly fabulous as just a stand alone dip, but if you want to make it a meal, pair it with your favorite seafood or this ridiculous easy, tender ahi tuna steak on top of a crunchy tostada. a perfect spring/summer (september? jogger's by sheree lol IYKYK) meal!
Ingredients
caramelized tropical guacamole
- 0.5 cup0.5 cup0.5 cup Mango, or any tropical fruit of choice, diced
- 0.5 cup0.5 cup0.5 cup Pineapple, or any tropical fruit of choice, diced
- 0.5 cup0.5 cup0.5 cup Papaya, or any tropical fruit of choice, diced
- 111 Jalapeño Pepper, finely chopped
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto
- 2 - 32 - 32 - 3 Avocado, large & ripe
- 0.5 bunch0.5 bunch0.5 bunch Cilantro, finely chopped
- 1 Tbsp1 Tbsp1 Tbsp Lime Juice
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder
- 0.5 tsp0.5 tsp0.5 tsp Onion Powder
- 0.5 tsp0.5 tsp0.5 tsp Sea Salt
- 0.25 tsp0.25 tsp0.25 tsp Red Pepper Flakes
- 2 oz2 oz2 oz Cotija Cheese, or queso fresco
ahi tuna
- seared ahi tuna (click for recipe)
- 1 Tbsp1 Tbsp1 Tbsp Taco Seasoning - Primal Palate, swap for EBTB seasoning in the original recipe
tostadas
- Corn Tortilla
- Cotija Cheese, or queso fresco
- Cilantro, finely chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
caramelized tropical guacamole
- add tropical fruit, jalapeno, & golden monk fruit to skillet; cook until fruit starts to caramelize.
- once starts to caramelize, remove from heat & allow to cool.
- in a large mixing bowl, peel, deseed, and mash avocados.
- add the remaining guacamole ingredients & cooled fruit to the avocados.
- refrigerate guac until ready to serve.
ahi tuna
- combine tuna & marinade following my recipe (swap EBTB for taco seasoning); marinate for at least 30 minutes.
- heat a skillet over medium-high heat.
- add a little oil to the skillet, then sear tuna on every side for ~1 minute.
- allow tuna to rest, then slice.
tostadas
- preheat oven to 350.
- bake tortillas for 10-12 minutes or until crispy (may flip halfway through).
- to build tostadas, first add caramelized tropical guacamole, then add sliced tuna, cheese, & cilantro.
- serve extra guacamole with chips & enjoy!
