cottage cheese pancakes – “syrniki”
pancakes come in all shapes & sizes. these are not your traditional pancake, in that they are a thicker & full of protein!
Ingredients
pancakes
- 2 cups2 cups2 cups Cottage Cheese
- 222 Egg
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder - Be Well by Kelly
- 0.25 - 0.5 cup0.25 - 0.5 cup0.25 - 0.5 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 2 Tbsp2 Tbsp2 Tbsp Psyllium Husk, Ground
- 1 cup1 cup1 cup Paleo Baking Flour - Bob's Red Mill
- 1 tsp1 tsp1 tsp Baking Powder
- 1/4 tsp1/4 tsp1/4 tsp Sea Salt
add-ins
- Blueberries, or fruit of choice
- Sugar-Free Dark Chocolate Chips
frosting
- 1/2 cup1/2 cup1/2 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Creamy Peanut Butter
- 1/4 cup1/4 cup1/4 cup Peanut Butter Powder
- 1/4 cup1/4 cup1/4 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 0.5 tsp0.5 tsp0.5 tsp Pure Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- add cottage cheese to a cheese cloth & strain out as much liquid as possible.
- put the strained cottage cheese in a bowl, then mash the curds.
- to the cottage cheese, whisk in the eggs, vanilla extract.
- in a separate bowl, combine protein powder, monk fruit, psyllium husk, paleo flour, baking powder, & salt.
- add liquid to dry ingredients & fold together.
- separate the dough into 12 equal portions, then add equal amounts of blueberries & chocolate chips to each portion.
- form into 12 hockey pucks & flatten to ¼”.
- heat a pan over low-medium heat & add oil/butter to the pan.
- add pancakes to pan & cook for 4-5 minutes/side or until golden brown.
- in a food processor, combine frosting ingredients; refrigerate until ready to serve.
- top pancakes with frosting & any other toppings of choice when serving (I had extra fruit & a sausage link).
