Easy Kimchi Grilled Cheese
Take your grilled cheese to the next level with this easy and delicious kimchi grilled cheese! Kimchi is combined with bacon and cooked in bacon fat for that heavenly flavor, then stuffed in between two slices of bread along with 2 types of cheeses. SO addicting and flavorful!
Ingredients
- 1 pieces1 pieces1 pieces Bacon, thick cut, chopped
- 0.5 cup0.5 cup0.5 cup Kimchi, preferably well fermented, chopped
- 2 tsp2 tsp2 tsp Brown Sugar
- 1 tsp1 tsp1 tsp Toasted Sesame Oil
- 2 pieces2 pieces2 pieces Sourdough Bread, or any bread of choice
- 1 Tbsp1 Tbsp1 Tbsp Mayonnaise, preferably Japanese mayo (Kewpie) OR you can use butter
- 0.25 cup0.25 cup0.25 cup Sharp Cheddar Cheese, shredded
- 0.25 cup0.25 cup0.25 cup Mozzarella, Shredded
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Butter, Unsalted
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat a nonstick skillet over medium high heat.
- Add chopped bacon, and cook stirring until crisp and some fat has rendered out.
- Add chopped kimchi and cook for 3-4 minutes stirring occasionally until lightly browned and caramelized. Stir in brown sugar and toasted sesame oil until dissolved, then remove from heat.
- Transfer the bacon kimchi mixture to a bowl then clean the pan to make the grilled cheese.
- Place the bread slices on a cutting board and spread mayo on the outside of the slices. Combine the shredded cheddar and shredded mozzarella together.
- Flip one slice of bread so the mayo side faces down, then top with 1/2 of the cheese mixture. Top with the bacon kimchi mixture, then top with the remaining 1/2 of the cheese mixture. Place the other slice of bread on top of the cheese, mayo side out.
- Heat the skillet over medium heat, then spread the butter evenly in the pan. Place the sandwich in the pan, cover, and cook for 2 to 3 minutes until the bottom is golden brown and crisp. Flip and cover again, and cook for another 2-3 minutes until the other side is browned and the cheese is melty.
- Slice, and enjoy!
