hawaiian bbq chicken quesadilla + pineapple guacamole
here is a fun variation on a traditional chicken quesadilla
Ingredients
quesadilla
- 3 - 4 oz3 - 4 oz3 - 4 oz Chicken Breasts, Boneless Skinless, cooked & shredded
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp homemade bbq sauce (click for recipe), I added pineapple for a hawaiian kick
- 222 Cassava Flour Tortillas - Siete Foods
- 0.25 cup0.25 cup0.25 cup Black Beans, drained & rinsed
- 1 Tbsp1 Tbsp1 Tbsp Cilantro, finely chopped
- 1 oz1 oz1 oz Pepper Jack Cheese, shredded
- Tallow, for frying, can sub oil or butter
pineapple guacamole
- 1-21-21-2 Avocado, ripe & mashed
- 111 Jalapeño Pepper, finely chopped
- 1/4 cup1/4 cup1/4 cup Cilantro, finely chopped
- 1 Tbsp1 Tbsp1 Tbsp Lime Juice
- 1/4 tsp1/4 tsp1/4 tsp Garlic Powder
- 1/4 tsp1/4 tsp1/4 tsp Onion Powder
- 1 pinch1 pinch1 pinch Sea Salt, to taste
- 1 pinch1 pinch1 pinch Red Pepper Flakes
- 1/2-1 cup1/2-1 cup1/2-1 cup Pineapple, finely chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a small bowl, combine chicken & bbq sauce, then microwave for 30-60 seconds to warm meat.
- to 1 tortilla, add bbq chicken, black beans, cheese, cilantro, & other tortilla.
- heat a skillet over medium heat & add tallow/oil/butter to the pan.
- add quesadilla & fry for 3-4 minutes each side.
- while quesadilla is cooking, combine all ingredients for pineapple guacamole.
- cut into 4 triangles & dip with pineapple guacamole.
