Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Combine water, cinnamon sticks, and fresh ginger slices in a large pot. Heat over high heat until it comes to a boil.
  2. Reduce the heat to medium low, cover, and simmer for 30 minutes.
  3. Use a small mesh strainer to remove and discard the cinnamon sticks and ginger slices.
  4. Add coconut sugar and honey, and stir. Let this simmer for 10 additional minutes until the sugar is fully dissolved.
  5. Remove from the heat and let the punch cool to a room temperature, then chill in the refrigerator.
  6. When ready to serve, pour into a glass and sprinkle with pine nuts.
