lemon berry cheesecake granola bark
cottage cheese is all the rage these days & for good reasons. for one, it's tasty, but it is also a great protein option. it can be made into savory recipes & for this recipe it is incorporated in the "cheesecake" frosting.
Ingredients
- 2 cup2 cup2 cup One Degree Organic Oats
- 0.5 cup0.5 cup0.5 cup Chia Seeds, ground
- 0.5 cup0.5 cup0.5 cup Pumpkin Seeds, or any other nut or seed
- 1 pinch1 pinch1 pinch Redmond Real Salt
- 0.25 cup0.25 cup0.25 cup Coconut Oil
- 2 Tbsp2 Tbsp2 Tbsp Cashew Butter, or any nut butter
- 2 Tbsp2 Tbsp2 Tbsp Honey, or maple syrup
- 0.25 cup0.25 cup0.25 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 0.5 cup0.5 cup0.5 cup Low-Fat Cottage Cheese
- 0.25 cup0.25 cup0.25 cup Sugar Free White Chocolate Chips
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder - Be Well by Kelly
- 2 Tbsp2 Tbsp2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 0.5 - 1 oz0.5 - 1 oz0.5 - 1 oz Freeze Dried Blueberries, or any freeze dried berries

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 325°F.
- in a bowl, combine oats, nuts/seeds, & sea salt.
- in a sauce pan over medium heat, melt butter or oil.
- remove from heat, then add nut butter, honey/maple syrup, granulated sweetener, & vanilla extract to melted butter or oil.
- using a large spatula, thoroughly mix wet ingredients into dry ingredients.
- add granola to a quarter-sheet baking sheet.
- bake for 10 minutes, then take it out and mix thoroughly.
- press down mixture very firmly, then bake for an additional 15 minutes.
- once the granola is done baking, press firmly again. allow it to cool completely.
- in a food processor, combine frosting ingredients.
- add a thin layer on top of cooled granola + sprinkle on freeze-dried berries.
- put in the freezer for at least 30 minutes before breaking into pieces.
- i like to store my bark in the freezer.
