loaded greek guacamole
don't get me wrong, my classic guacamole is TO DIE FOR, but sometimes your taste buds are feeling like taking a trip to the med! in this recipe, I transform the traditional mexican guacamole for a loaded greek-style guacamole. it still has that delicious guac taste with a boost of tang & zest!
Ingredients
- 2 - 32 - 32 - 3 Avocado, large, ripe
- 0.25 cup0.25 cup0.25 cup Plain Greek Yogurt
- 1 Tbsp1 Tbsp1 Tbsp Red Wine Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Peperoncini Juice
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 0.5 cup0.5 cup0.5 cup English Cucumber, finely diced
- 0.5 cup0.5 cup0.5 cup Tomato, Cherry, finely diced
- 0.25 cup0.25 cup0.25 cup Kalamata Olives, finely diced
- 0.25 cup0.25 cup0.25 cup Peperoncini Peppers, finely diced
- 111 Jalapeño Pepper, finely diced
- 3 - 4 oz3 - 4 oz3 - 4 oz Feta Cheese
- 0.5 tsp0.5 tsp0.5 tsp Dill, Dried
- 0.5 tsp0.5 tsp0.5 tsp Oregano, Dried
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder
- 0.5 tsp0.5 tsp0.5 tsp Onion Powder
- 0.5 tsp0.5 tsp0.5 tsp Salt and Pepper, to taste
- 0.25 tsp0.25 tsp0.25 tsp Red Pepper Flakes

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a large mixing bowl, peel, deseed, and mash avocados.
- mix in greek yogurt, red wine vinegar, peperoncini juice, lemon juice, & seasonings.
- fold in the remaining ingredients to the guacamole.
- mix well & refrigerate for at least 30 minutes before serving.
- serve with your favorite chips or crackers (I listed my favs!) & enjoy!
