what's more earthy, than a rainbow of veggies in a salad?! this is the perfect way to celebrate earth day by getting in a TON of vibrant, nutrient-dense veggies in a tasty side dish. feel free to mix & match any of your favorite produce in this recipe. the more color you can get, the more nutrients you can hit! also, bacon - you make every recipe better 😉

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat oven to 400.
  2. to a sheet pan, add ~4 lbs of rainbow veggies of choice (I listed a few of my favorites, but feel free to switch & swap any you like - goal is to get as many colors as possible!)
  3. toss veggies in a little avocado oil, salt, & pepper.
  4. roast for 25-30 minutes or until veggies are tender with a fork.
  5. once veggies are finished, let cool before assembling the rest of the salad.
  6. to a large mixing bowl, add cooled roasted veggies & cooked bacon.
  7. in a separate bowl, mix together all ingredients for greek yogurt honey mustard.
  8. add sauce to veggies; refrigerate for at least 2 hrs before serving.
  9. serve with your favorite protein, for a delicious picnic meal!
