loaded rainbow potato salad
what's more earthy, than a rainbow of veggies in a salad?! this is the perfect way to celebrate earth day by getting in a TON of vibrant, nutrient-dense veggies in a tasty side dish. feel free to mix & match any of your favorite produce in this recipe. the more color you can get, the more nutrients you can hit! also, bacon - you make every recipe better 😉
Ingredients
- 8 oz8 oz8 oz Radish, diced
- 8 oz8 oz8 oz Orange Bell Pepper, diced
- 8 oz8 oz8 oz Golden Beets, peeled & diced
- 12 oz12 oz12 oz Broccoli, cut into florets
- 1 lb1 lb1 lb Potatoes, Baby, may sub any type of potato
- 12 oz12 oz12 oz Cauliflower, Purple, cut into florets
- Avocado Oil, for roasting veggies
- Salt and Pepper
- easy baked bacon (click for recipe)
- cobb salad + "honey" mustard dressing (click for recipe), the greek yogurt "honey mustard" from this recipe
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 400.
- to a sheet pan, add ~4 lbs of rainbow veggies of choice (I listed a few of my favorites, but feel free to switch & swap any you like - goal is to get as many colors as possible!)
- toss veggies in a little avocado oil, salt, & pepper.
- roast for 25-30 minutes or until veggies are tender with a fork.
- once veggies are finished, let cool before assembling the rest of the salad.
- to a large mixing bowl, add cooled roasted veggies & cooked bacon.
- in a separate bowl, mix together all ingredients for greek yogurt honey mustard.
- add sauce to veggies; refrigerate for at least 2 hrs before serving.
- serve with your favorite protein, for a delicious picnic meal!
