  1. in a bowl, mix together all ingredients for filling.
  2. freeze for 5-10 minutes, then roll into little balls; store in the freezer until dough is ready.

  1. in a food processor, add dry ingredients; blitz into a powder.
  2. transfer to a bowl, then add softened nut butter (microwave for 10-15 seconds), vanilla extract & little water; combine to form a dough.
  3. put dough in freezer for 30-60 minutes.
  4. using a small scoop, get a scoop of cookie dough, then place a little of the filling ball inside; roll into a ball.
  5. place balls on a lined baking sheet.
  6. melt white chocolate chips, then drizzle on top of each bite (I melted the chocolate, then added to a small zip lock bag. then cut a tiny hole in the corner & pipe onto each bite).
  7. place balls in the freezer & store in the freezer to enjoy at any time.
