open-faced apple & bacon tuna melt
ooey, gooey, melty cheese. count me in! pepper jack is my go to cheese for a tuna melt (& pretty much every cheesy recipe). it mixes all the flavors of sweet, spicy, savory, & DELICIOUS!
Ingredients
- 3 - 5 oz3 - 5 oz3 - 5 oz Canned Tuna, drained
- 2 Tbsp2 Tbsp2 Tbsp Plain Greek Yogurt
- 1 tsp1 tsp1 tsp Coarse-Dijon Mustard (Noble Made)
- 1 Tbsp1 Tbsp1 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp Apple Cider Vinegar
- 0.50.50.5 Honeycrisp Apples, finely chopped
- 111 Bacon
- 111 Salt and Pepper
- 2 pieces2 pieces2 pieces homemade grain-free bread (click for recipe), AWG or base culture are my other favs!
- 1 oz1 oz1 oz Pepper Jack Cheese
- 1 pinch1 pinch1 pinch Red Pepper Flakes

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a small bowl, combine tuna, yogurt, mustard, monk fruit, vinegar, apple, bacon, salt, & pepper.
- option to warm in microwave for 30-60 seconds.
- to a slice of bread, add tuna mixture, cheese, & red pepper flakes.
- add tuna melt to a skillet over medium heat for 2-3 minutes to “toast” bottom of bread, then add a lid to the skillet to melt the cheese.
- serve with a veggie side.
