pb & j protein cake
need a protein rich pb & j? make this delicious cake that you can enjoy anytime of day! like all of my protein cakes, I love them with an omelette at breakfast. you could also use the homemade chia jam + pb protein frosting to make a traditional pb & j sandwich. endless options for a delicious, healthy, classic treat!

- 0.25 cup0.25 cup0.25 cup Coconut Flour
- 2 Tbsp2 Tbsp2 Tbsp Chia Seeds, ground
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder - Be Well by Kelly
- 0.5 cup0.5 cup0.5 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp Baking Powder
- 1 tsp1 tsp1 tsp Baking Soda
- 1 pinch1 pinch1 pinch Redmond Real Salt
- 1 cup1 cup1 cup Plain Greek Yogurt
- 222 Egg
- 0.5 cup0.5 cup0.5 cup Water, or milk of choice
- 1 tsp1 tsp1 tsp Vanilla Extract - Primal Palate
- 1 cup1 cup1 cup Frozen Raspberries
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 Tbsp1 Tbsp1 Tbsp Chia Seeds
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 0.25 cup0.25 cup0.25 cup Peanut Butter Powder
- 2 Tbsp2 Tbsp2 Tbsp Organic Creamy Peanut Butter
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp Vanilla Extract - Primal Palate
- 111 Water, to thin as needed

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 350.
- in a large bowl, combine flour, chia seeds, protein powder, sweetener, baking powder, baking soda, & salt.
- in a separate bowl, whisk together greek yogurt, eggs, milk or water, & vanilla extract.
- add liquid to dry ingredients & fold together.
- grease a 9X9 pan with a little oil, then pour in cake batter.
- to make jam, add all ingredients to a small sauce pan & cook on low heat for 6-8 minutes.
- cool completely to allow jam to thicken.
- add dollops of jam to cake & using a knife, swirl jam around cake.
- bake for 35-40 minutes or until a toothpick comes out clean.
- in a bowl, combine pb protein frosting ingredients.
- let bars cool, then add pb protein frosting.
