need a protein rich pb & j? make this delicious cake that you can enjoy anytime of day! like all of my protein cakes, I love them with an omelette at breakfast. you could also use the homemade chia jam + pb protein frosting to make a traditional pb & j sandwich. endless options for a delicious, healthy, classic treat!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat oven to 350.
  2. in a large bowl, combine flour, chia seeds, protein powder, sweetener, baking powder, baking soda, & salt.
  3. in a separate bowl, whisk together greek yogurt, eggs, milk or water, & vanilla extract.
  4. add liquid to dry ingredients & fold together.
  5. grease a 9X9 pan with a little oil, then pour in cake batter.
  6. to make jam, add all ingredients to a small sauce pan & cook on low heat for 6-8 minutes.
  7. cool completely to allow jam to thicken.
  8. add dollops of jam to cake & using a knife, swirl jam around cake.
  9. bake for 35-40 minutes or until a toothpick comes out clean.
  10. in a bowl, combine pb protein frosting ingredients.
  11. let bars cool, then add pb protein frosting.
