peanut butter banana whoopie pies
what's better than 1 cookie? 2 cookies stuck together with a pb frosting! i usually store these in the freezer, then thaw for a couple minutes at room temp before devouring. such a great warm weather treat!

- 111 Egg
- 0.25 cup0.25 cup0.25 cup Organic Creamy Peanut Butter
- 0.25 cup0.25 cup0.25 cup Peanut Butter Powder
- 0.25 cup0.25 cup0.25 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp Vanilla Extract - Primal Palate
- 1 cup1 cup1 cup One Degree Organic Oats
- 2 Tbsp2 Tbsp2 Tbsp Chia Seeds, ground, may sub ground flax
- 1 tsp1 tsp1 tsp Baking Soda
- 0.5 tsp0.5 tsp0.5 tsp Redmond Real Salt
frosting
- 0.25 cup0.25 cup0.25 cup Plain Greek Yogurt, or cottage cheese
- 0.25 cup0.25 cup0.25 cup Peanut Butter Powder, may need to add a little water
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder - Be Well by Kelly
- 2 Tbsp2 Tbsp2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp Vanilla Extract - Primal Palate

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 350.
- add all cookie ingredients to a food processor & blend.
- line a baking sheet with parchment paper, then using a cookie scoop make ~24-30 cookies.
- bake for 15 minutes or until slightly golden brown.
- add all frosting ingredients to a food processor & blend (store in the fridge until cookies are cooled to thicken up).
- allow cookies to cool completely, then add frosting to half of the cookies.
- layer on other cookie, then refrigerate or freeze until set.
