these pb chocolate crunch balls are another win in my protein cookie dough ball series — a high-protein, gluten-free, & sugar-free twist on nutty buddy bars.
made with my favorite bars by BTR, peanut butter, chocolate, & a whole lotta crunch.
nostalgic, no-bake, & seriously snack-worthy 💪✨
Ingredients
peanut butter chocolate center
- 2 Tbsp2 Tbsp2 Tbsp Peanut Butter Powder
- 2 Tbsp2 Tbsp2 Tbsp Chocolate Protein Powder - Be Well by Kelly
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Peanut Butter, softened
- 1 pinch1 pinch1 pinch Chocolate Salt Electrolyte Mix - LMNT, may sub sea salt
- Water, as needed
dry ingredients
- 222 Peanut Butter Crunch Protein + Superfood Bar - B.T.R. Nation
- 1 oz1 oz1 oz Grain Free Pretzel Sticks, Sea Salt - Fit Joy, + a few more for folding in
- 0.25 cup0.25 cup0.25 cup Peanut Butter Powder
- 0.25 - 0.5 cup0.25 - 0.5 cup0.25 - 0.5 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto
wet ingredients
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Peanut Butter
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- Water, as needed

peanut butter chocolate filling
- in a bowl, mix together all ingredients for filling.
- freeze for 5-10 minutes, then roll into little balls; store in the freezer until dough is ready.
protein cookie dough ball
- in a food processor, add dry ingredients; blitz into a powder.
- transfer to a bowl, then add softened nut butter (microwave for 10-15 seconds), vanilla extract & little water; combine to form a dough.
- fold in a few extra crushed pretzels to give you that crunch.
- put dough in freezer for 30-60 minutes.
- using a small scoop, get a scoop of cookie dough, then place a little of the filling ball inside; roll into a ball.
- place balls on a lined baking sheet.
- melt dark chocolate chips, then drizzle on top of each bite (I melted the chocolate, then added to a small zip lock bag. then cut a tiny hole in the corner & pipe onto each bite).
- sprinkle on salt, then place balls in the freezer & store in the freezer to enjoy at any time.
