i love a good national food holiday & today happens to be national pigs in a blanket day. these little bites are gluten-free, sugar-free, protein-packed, & just too darn cute to pass up.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat oven to 350.
  2. in a bowl, combine flour, protein powder, psyllium husk, baking powder, & salt.
  3. in a separate bowl, whisk together egg, greek yogurt, water, & vanilla extract.
  4. add wet ingredients to dry ingredients & combine.
  5. add a small cookie scoop of batter to each divot in a silicon mini muffin tin.
  6. add sausage link to the middle of each muffin.
  7. bake for 25-28 minutes or until a toothpick comes out clean from the muffin.
  8. serve with your favorite dip!

Notes

I like to dip mine in my protein peanut butter dip, but you can dip it in any nut butter, maple syrup, or any other creative concoction!
