this ruby romesco flatbread is bright, pink, springy, & packed with color, nutrients, & a heck of a lot of flavor.

- 1 lb1 lb1 lb Salmon, Canned, or seafood of choice
- ruby romesco (click for recipe)
- cauliflower flatbread crust (click for recipe), made into 2 rectangular flatbreads
- Goat Cheese
for serving
- Microgreens
- Radish
- Pistachios, Raw
- Red Pepper Flakes
- greek yogurt "honey" mustard (click for recipe)

- preheat oven to 400.
- mix seafood of choice with the ruby romesco sauce; warm up in a skillet or microwave
- to assemble flatbread, add cauliflower flatbread to a baking sheet, then top with ruby romesco mixture, & goat cheese.
- bake for 8-12 minutes or until the cheese is soft and the edges are crisp. broil for 1–2 minutes at the end for extra golden edges, if desired.
- when serving top with microgreens, radishes, pistachios, red pepper flakes, & finish with a drizzle of greek yogurt “honey” mustard.
