  1. follow my recipe for making cottage cheese ice-cream.
  2. when ready to serve, let sit out 10-15 minutes before scooping.

skillet peach cookie crumble

  1. preheat smoker (grill or oven works too!) to 375.
  2. in a bowl, combine all ingredients for peach filling; set aside while preparing crumble.
  3. in a food processor, blitz BTR bar, flour, monk fruit, & smoked salt.
  4. add to a bowl, then using your fingers mix in cashew butter & a teeny bit of water to form a crumble.
  5. to a cast iron skillet, add peach filling & evenly top with crumble.
  6. add skillet to smoker & cook for 15-20 minutes or until golden brown on top.
  7. while skillet is cooking get your protein ice-cream out to thaw.
  8. remove your peach cookie crumble from smoker & sit for 5-10 minutes; add protein ice-cream on top.
  9. enjoy fireside or straight from the skillet.
