sloppy joe skillet
sloppy joe's are just one of those easy, nostalgic meals you can't pass up. it's such an easy one-skillet meal & this version is painstakingly easy, nutrient packed, gluten-free, & beyond tasty.
plus, who said it can only be enjoyed as a sandwich? pair it with my absolute favorite dip chips + cheese for some nachos OR you fav veggies for a quick paleo bowl.
Ingredients
sloppy joe meat
- 20 oz20 oz20 oz Bell Pepper and Onion Blend, Frozen
- 10 oz10 oz10 oz Baby Bella Mushrooms, sliced
- 2 lb2 lb2 lb Ground Beef, I love using one with an organ meat blend!
- 11.3 oz11.3 oz11.3 oz Unsweetened Ketchup - Primal Kitchen, 1 bottle
- 0.5 - 1 cup0.5 - 1 cup0.5 - 1 cup Water
- 0.25 cup0.25 cup0.25 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto
- 1 Tbsp1 Tbsp1 Tbsp Coconut Aminos
- 1 Tbsp1 Tbsp1 Tbsp Dijon Mustard
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder
- 0.5 tsp0.5 tsp0.5 tsp Onion Powder
- 0.5 tsp0.5 tsp0.5 tsp Cowboy Salt - Texas Salt Co., or any smoked salt
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

- Delicata Squash, or any root veggies
- Broccoli, or any non-starchy veggies
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
sloppy joe meat
- in a large skillet, saute peppers, onions, & mushrooms until tender & caramelized (~12-15 minutes).
- move veggies to a plate, then brown meat.
- once meat is fully cooked, mix in veggies.
- in a bowl, combine ketchup, monk fruit, coconut aminos, dijon mustard, & seasoning.
- pour ketchup mixture + water into skillet; bring to a boil, then reduce to a simmer for 10-15 minutes.
nachos
- first lay down a layer of your dip chips, then spoon on your sloppy joe meat, & top with cheese.
- microwave for 15-30 seconds to melt cheese & enjoy!
bowls
- first roast any root & non-starchy veggies of choice (I added my two favs!).
- to roast veggies, toss them in a little avocado oil & seasoning, then roast for 25-30 minutes at 400.
- to build your bowl, add veggies & meat to skillet & enjoy!
