sweet street protein pan-toast
a taco truck–inspired avocado toast?! yeppers 🌮🥑đźĄđźŚ¶ 🔥
I used my street taco meatballs (from the loaded bowls), but upgraded it with a little mango chili LMNT. topped with tropical fruit, crushed masa corn tortilla chips, crispy bacon, cotija, & siete's chamoy drizzle… all layered on a protein pancake "toast."

- 1.5 - 2 oz1.5 - 2 oz1.5 - 2 oz Traditional Tortilla Chips - Masa
- 0.25 cup0.25 cup0.25 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto
- 1 Tbsp1 Tbsp1 Tbsp Mango Chili Salt Electrolyte Mix - LMNT
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder
- 1 tsp1 tsp1 tsp Onion Powder
- 0.25 cup0.25 cup0.25 cup Cilantro, finely chopped
- 1 lb1 lb1 lb Ground Chicken
- 0.25 cup0.25 cup0.25 cup Cottage Cheese

mango chili schmear

- 1 tsp1 tsp1 tsp Mango Chili Salt Electrolyte Mix - LMNT
pan-toast
- greek yogurt protein pancakes & waffles (click for recipe), the large size
- Mango, or any tropical fruit
- easy baked bacon (click for recipe), crumbled
- Traditional Tortilla Chips - Masa, crumbled
- Cotija Cheese, or queso fresco

mango chili street taco meatballs
- preheat oven to 400.
- add the masa corn tortilla chips, monk fruit, mango chili LMNT, garlic powder, & onion powder to a food processor & blitz a few times into a finer crumble.
- to a bowl, add crunchy mixture + remaining meatball ingredients.
- using a small cookie scoop, make mini meatballs (~36-42).
- place meatballs on a lined baking dish, then bake for ~12-15 minutes.
mango chili schmear
- in a bowl, combine avocado, cottage cheese & mango chili salt.
pan-toast
- in a skillet, reheat pancake by “toasting” for 1-2 minutes on each side.
- to a pan-toast, add on mango chili schmear → meatballs → fruit → bacon → tortilla chips → cheese → cilantro → drizzle of chamoy.
