Kale White Bean Salad
This nutrient-packed kale white bean salad is inspired by the beloved one from Los Angeles store Erewhon. Curly kale, white beans, various seeds and avocado tossed in delicious lemon vinaigrette makes this amazing, nourishing salad a must-try!
Ingredients
- 8 cups8 cups8 cups Kale, curly
- 1 tsp1 tsp1 tsp Olive Oil, or more if needed
- 15 oz15 oz15 oz White Beans, canned, rinsed and drained
- 3 Tbsp3 Tbsp3 Tbsp Hemp Hearts
- 0.25 cup0.25 cup0.25 cup Sunflower Seeds
- 0.25 cup0.25 cup0.25 cup Pumpkin Seeds, raw pepitas
- 1 whole1 whole1 whole Avocado, chopped
- 0.25 cup0.25 cup0.25 cup Olive Oil
- 3.5 Tbsp3.5 Tbsp3.5 Tbsp Lemon Juice, fresh, more or less to taste
- 2 tsp2 tsp2 tsp Dijon Mustard
- 1 Tbsp1 Tbsp1 Tbsp Honey, or maple syrup
- 1 clove1 clove1 clove Garlic, minced
- 0.25 tsp0.25 tsp0.25 tsp Salt, more or less to taste
- 0.25 tsp0.25 tsp0.25 tsp Black Pepper, more or less to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Prepare the kale: remove middle thick stem from kale by tearing the leaves with your hands, using a knife or herb stripping tool. Chop the kale, then wash it thoroughly. Dry it well using a salad spinner.
- Rinse the white beans under cold water and drain well.
- Add kale to a large bowl, drizzle a small amount of olive oil, then massage the kale with your hands for about 1-2 minutes until it feels more tender.
- Whisk together the ingredients for the vinaigrette: olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt and pepper.
- Add the kale, white beans, hemp seeds, sunflower seeds, pumpkin seeds and some of the vinaigrette and gently stir. Then add the avocado and adjust vinaigrette amount if needed as well as salt and pepper. Serve and enjoy!
