Vegan Sweet Potato Chili
This vegan sweet potato chili is easy to make and full of flavor! It comes together in one pot, in just under 1 hour.
Ingredients
- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil
- 111 Yellow Onion, chopped
- 222 Sweet Potato, chopped
- 1 Tbsp1 Tbsp1 Tbsp Chili Powder
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Cumin, Ground

- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Paprika

- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Garlic Powder

- 20 oz20 oz20 oz Diced Tomatoes & Green Chilies - Rotel
- 15 oz15 oz15 oz Chili Beans
- 1.5 cups1.5 cups1.5 cups Water
- 1 tsp1 tsp1 tsp Sea Salt

- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

- Warm avocado oil in a large pot over medium heat and sauté the onion for 5 minutes, until translucent. Add the sweet potato and cook for another 5 minutes.
- Season with chili powder, cumin, paprika, garlic powder, salt, and pepper. Stir in remaining ingredients then bring to a simmer. Let cook, uncovered, for about 25 minutes, stirring occasionally.
- Once thickened to desired consistency, taste and adjust seasonings, if needed. Serve warm!
