Vegan Mini Sweet Pepper Nachos are the ultimate meatless game day snack!
Ingredients
- 1 lb1 lb1 lb Sweet Pepper, sliced in half, seeds removed
- 15 oz15 oz15 oz Black Beans, drained and rinsed
- 15 oz15 oz15 oz Corn, drained and rinsed
- 111 Lime, juiced
- 1 tsp1 tsp1 tsp Sea Salt
- 0.5 tsp0.5 tsp0.5 tsp Chili Powder
- 0.5 tsp0.5 tsp0.5 tsp Paprika
- 0.5 tsp0.5 tsp0.5 tsp Ground Cumin
- 8 oz8 oz8 oz Vegan Shredded Cheddar
- 111 Jalapeño, sliced
- 111 Roma Tomato, chopped
- 0.50.50.5 Red Onion, chopped

- Preheat oven to 400F and prepare a baking sheet with parchment paper. Place sliced mini sweet peppers on the baking sheet and set aside.
- In a small bowl, combine black beans, corn, lime juice, chili powder, paprika, cumin, and salt. Spoon mixture into the peppers then top with vegan cheese and jalapeños.
- Bake for 10 minutes, until cheese is melted. Remove from oven and top with tomato and red onion, then drizzle with vegan cheese sauce.
- Enjoy served with vegan queso, salsa, or guacamole!
