Hidden Veggie Spaghetti Bolognese
If you love pasta but want to get some extra veggies in your diet this is a delicious & hearty spaghetti bolognese. Perfect for sneaking veggies in your kids diets.
Ingredients
- 1 lb1 lb1 lb Ground Beef
- 28 fl oz28 fl oz28 fl oz Fire Roasted Crushed Tomatoes
- 28 fl oz28 fl oz28 fl oz San Marzano Peeled Tomatoes, Canned
- 1 Tbsp1 Tbsp1 Tbsp Basil, Dried
- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Oregano, Dried
- 1 tsp1 tsp1 tsp Onion Powder
- 1 whole1 whole1 whole Yellow Onion, chopped
- 8 fl oz8 fl oz8 fl oz Baby Bella Mushrooms, chopped
- 1 whole1 whole1 whole Zucchini, chopped
- 4 cloves4 cloves4 cloves Garlic, chopped
- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Salt and Pepper, give or take
- 1 lb1 lb1 lb Pasta
- .5 cup.5 cup.5 cup Parmesan Cheese, for topping

- start by browning your ground beef with salt and pepper. Add onions, carrots and garlic. Sauté for 3-5 minutes until they start to get soft. Add your canned tomatoes, the dried spices and the rest of the veggies. Let simmer for at least 30 minutes. Taste for seasoning. At this point you may need to add a little extra salt based on your own pallet. Please note that the longer this cook's the more the flavors develop. Boil your favorite pasta. I like to serve this dish with some fresh parmesan cheese on top and enjoy!
