Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add all ingredients to a blender and blitz for 15-20 seconds. Scrape the sides down with a spatula and pulse a couple more times. Don't over blend!
  2. Gently remove the cottage cheese mousse from the blender, refrigerate covered if not using right away. Add toppings of choice like whipped cream, yogurt, chocolate chips, shaved chocolate, nuts, nut butter, sprinkles, granola or fruit, serve and enjoy!

Notes

Cottage cheese: Low-fat or full-fat. Don't over blend the mousse or it'll turn watery. Monk fruit: you can replace with sweetener of choice such as honey, maple syrup, sugar, but you'll need more or less to achieve your desired sweetness. Leftovers can be kept covered and refrigerated for up to 4 days.
