Sheet Pan Breakfast Taters
I'm obsessed with everything potato, and I'm especially obsessed with these roasted breakfast taters. Not only do you get tender, perfectly seasoned veggies & potatoes, but these free up your stove top to complete everything else for your breakfast / brunch.
Ingredients
- 2 whole2 whole2 whole Potatoes, Russet, Scrubbed & chopped in to 3/4" cubes (5.5 - 6 C)
- 1 whole1 whole1 whole Orange Bell Pepper, chopped
- 1 whole1 whole1 whole Red Onion, chopped
- 2 whole2 whole2 whole Jalapeño Pepper, sliced
- .25 cup.25 cup.25 cup Extra Virgin Olive Oil
- 4 tsp4 tsp4 tsp Cajun Seasoning, Clubhouse
- 1 tsp1 tsp1 tsp Garlic Powder
- 1 tsp1 tsp1 tsp Onion Powder
- 1 tsp1 tsp1 tsp Himalayan Pink Salt, More To Taste
- 1 whole1 whole1 whole Red Pepper Flakes, To Taste
- 1 whole1 whole1 whole Black Peppercorns, Ground Fresh, To Taste
- 1 whole1 whole1 whole Parsley, Garnish
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 425 F
- Add the potatoes, onion, pepper, and jalapeno to a mixing bowl. Pour the EVOO in to the bowl followed by the Cajun seasoning, pepper flakes, salt, garlic, and onion powders. Toss everything in the bowl until evenly coated and transfer to a baking sheet in a single layer. Sprinkle the tray with cracked pepper before placing in to the oven to bake.
- Bake 40 - 45 minutes, flipping a couple times throughout the cook time. Once tender, if they're in need of some additional colour, switch the oven to BROIL on HIGH and let them char up a bit for a couple of minutes. Carefully remove the tray and set on to a wire cooling rack.
- Taste the potatoes and hit them with salt if needed / desired. Sprinkle fresh parsley over the tray.
- Serve as a side to your breakfast plate, or even serve as the base with a fried egg and some garnishes & sauces on top. ENJOY!
