Low Carb Atayef (Ricotta Cream Stuffed Pancakes)
These delicate, lacy pancakes are a Middle Eastern treat, traditionally enjoyed during #Ramadan. I made a low-carb version using a lowcarb pancake mix, filled with sweetened ricotta, infused with orange, and finished with crushed pistachios + a drizzle of sugar-free maple syrup. Perfect for spring or any sweet craving!
Ingredients
Pancakes
- 0.5 cup0.5 cup0.5 cup Pancake Plus Keto Friendly Baking Mix - Good Dee's

- 3 Tbsp3 Tbsp3 Tbsp Almond Milk, Unsweetened Vanilla
- 1 Tbsp1 Tbsp1 Tbsp Water
Filling
- 8 oz8 oz8 oz Ricotta, whole milk
- 0.25 cup0.25 cup0.25 cup Powdered Monkfruit Sweetener - Lakanto

- 0.25 tsp0.25 tsp0.25 tsp Orange Extract
Toppings
- 0.5 cup0.5 cup0.5 cup Pistachios, Roasted, crushed
- 0.25 cup0.25 cup0.25 cup Maple Flavored Syrup - Lakanto, optional

Rose Water Syrup
- 0.5 cup0.5 cup0.5 cup Water
- 1 cup1 cup1 cup Allulose

- 1 tsp1 tsp1 tsp Rose Water

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Directions:
- 1. Mix pancake ingredients until thin. May need to add more water.
- 2. Cook heaping tablespoons of batter in a heated pan over medium-low until lacy and set. Cover if needed.
- 3. Cool, then fold pancakes into cones, sealing two-thirds of the way.
- 4. Mix filling ingredients, then stuff into pancakes.
- 5. Dip in pistachios and drizzle with syrup before serving.
- 6. Rose water syrup: combine 1/2 cup water, 1 cup allulose sweetener and in a small sauce pan. Heat over medium-high heat until sweetener has dissolved, simmer for 10 minutes until thick and sticks to the back of a spoon, remove from heat and add in 1 tsp rose water.
Notes
Traditionally these are served with a rose water syrup. However, they can be served with a sugar-free maple syrup as well.
