Raisin Bran Muffins

- 1 cup1 cup1 cup Gluten-Free Flour

- 0.5 cup0.5 cup0.5 cup Flaxseed Meal
- 0.25 cup0.25 cup0.25 cup Golden Monkfruit Sweetener - Lakanto, Coconut sugar, or date sugar works as well

- 2 tsp2 tsp2 tsp Baking Powder

- 2 tsp2 tsp2 tsp Baking Soda
- 0.5 tsp0.5 tsp0.5 tsp Himalayan Pink Salt, or table salt

- 2 whole2 whole2 whole Banana, Ripe, Mashed
- 2 whole2 whole2 whole Egg
- 2 tsp2 tsp2 tsp Pure Vanilla Extract

- 0.25 cup0.25 cup0.25 cup Coconut Oil, Melted
- 0.25 cup0.25 cup0.25 cup Organic Coconut Yogurt, Plain - Cocojune
- 0.333 cup0.333 cup0.333 cup Honey, or molasses

- 0.5 cup0.5 cup0.5 cup Almond Milk, Or oat milk
- 0.75 cup0.75 cup0.75 cup Raisins, Rinsed

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees fahrenheit
- Mash Banana in a large bowl
- Add in coconut sugar, eggs, oil, vanilla, honey, yogurt and honey
- Mix until combined
- Stir in oat bran, flour, flaxseed, baking powder, baking soda, and salt
- Dust raisins in flour (to prevent sinking), the gently fold in
- Grease or line a muffin/cupcake pan
- Pour in batter ⅔ - ¾ of the way full (we want it almost full to get the nice round top) *tip: only line every other cup for maximum rise
- Bake for 25 minutes or until done

- to make vegan, substitute egg with flax eggs
