Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine ground chicken, mayonnaise, relish, oregano, and salt in a mixing bowl. Mix gently with your hands and form four football-shaped patties, slightly larger than the bread, to allow for shrinkage during cooking. Refrigerate until ready to grill.
- In a food processor, blend basil, garlic, cheese, salt, and pepper until finely chopped. Slowly pour in the olive oil and blend until well mixed; set aside.
- Preheat the grill. While the grill is preheating, cut tomato slices and slice fontina cheese. Be sure to oil the grill before placing chicken patties on it, as they tend to stick without the oil. Grill the burgers over medium heat for about 8 minutes. With a large spatula, flip the burgers and grill for an additional 5-6 minutes, covered. Add cheese and let it melt for 2 minutes.
- Brush olive oil on the baguette while the cheese is melting and toast for about 2 minutes.
- To assemble, cut the baguette to the size of the chicken burgers. Top each baguette with a patty and a tomato. Drizzle the basil sauce on top.
Notes
If you are unsure of the chicken burger's doneness, use an instant-read thermometer. It should reach an internal temperature of 165°F.
