Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 220u00b0C (425u00b0F) and place a small amount of beef dripping in each of the 6 muffin cups. Put the muffin tray in the oven to heat up the oil.
  2. Warm up the milk in a small bowl and stir in the psyllium husk. Let it sit for 10 minutes until it gets thick.
  3. In another bowl, whisk together the other dry ingredients.
  4. Crack the eggs and add them to the dry ingredients. Mix everything well until smooth.
  5. Pour in the psyllium husk and milk mixture and give it another good stir.
  6. Carefully remove the muffin tray from the oven and divide the batter evenly among the 6 muffin cups. The oil should be very hot and sizzling, so be careful not to burn yourself.
  7. Return the muffin tray to the oven and bake for 20 to 25 minutes, or until the gluten-free Yorkshire puddings are risen, golden brown, and crisp on the edges. Do not open the oven door while baking, as this will cause them to collapse.
