Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. 1. Preheat your oven to 400 degrees.
  2. 2. Cut your squash in half & remove the seeds. Drizzle with olive oil, salt and pepper and bake for 25 minutes or until fork tender.
  3. 3. Chop your chicken breast into bite size pieces.
  4. 4. Sautee your chicken with salt & pepper or your favorite seasoning salt. Once the chicken is cooked drizzle about 1/4 cup of buffalo sauce.
  5. 5. When your squash is done use a fork to shred the squash to make noodles. Top with your cooked chicken and mozzarella cheese.
  6. 6. Bake for about 3-5 minutes or until the cheese is melted.
  7. 7. When the squash comes out of the oven top with more buffalo sauce and blue cheese dressing if desired.

Notes

You can substitute chicken breast for a rotisserie chicken for an easier meal!
