Gluten Free Gumbo
Living in the south for many years I came to love gumbo. Basically a simple meal but it packs a punch with those authentic Louisiana flavors. To be honest sometimes I make it without rice but it is more classic with rice. You can use regular rice or cauliflower rice.
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil

- 111 Onion, small chop
- 222 Celery, small chop
- 111 Bell Pepper, any color, small chop
- 2 cloves2 cloves2 cloves Garlic, minced

- 1 tsp1 tsp1 tsp Sea Salt

- 1 tsp1 tsp1 tsp Black Pepper

- 2 tsp2 tsp2 tsp Cajun Seasoning, or Blackening seasoning

- 1 tsp1 tsp1 tsp Oregano, Dried

- 2 cups2 cups2 cups Chicken Bone Broth

- 4 fl oz4 fl oz4 fl oz Tomato Sauce
- 1 lb1 lb1 lb Andouille Sausage, sliced to your preferred thickness

- 3 pieces3 pieces3 pieces Rainbow Chard, or any greens you like, sliced thin
- 222 Green Onion (Scallion), sliced

- 1 cup1 cup1 cup Long-Grain Rice, cooked according to package

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a Dutch oven add oil, onion, celery, bell pepper, and garlic. Stir and cook on medium for 5-8 minutes.
- Add sea salt, pepper, Cajun and oregano seasonings.
- Add bone broth and tomato sauce. Stir and cook for 10 minutes.
- Add sausage and cook for 5 minutes.
- Add chard and cook for 10-15 minutes.
Notes
If you prefer your gumbo thicker then after adding the chard add a slurry. A slurry is 1/4 cup room temperature water and 1 Tbsp tapioca flour/starch stirred until smooth. Pour into pot and stir. Let cook for 10 minutes to thicken.
