Pecan and Cashew Protein Bites
Our favorite fall treat by Brittany Meadth: Pecan and Cashew Protein Bites.
Ingredients
- 12 oz12 oz12 oz Organic Sprouted Pecans - Lark Ellen Farm

- 10 oz10 oz10 oz Organic Sprouted Cashews (Unsalted) - Lark Ellen Farm

- 12 whole12 whole12 whole Medjool Dates, pits removed
- 2 Tbsp2 Tbsp2 Tbsp Coconut Oil
- 11-12 oz11-12 oz11-12 oz Dark Chocolate Chips, or variety of choice

- 2 Tbsp2 Tbsp2 Tbsp Coconut Oil
- 3-4 Tbsp3-4 Tbsp3-4 Tbsp Coconut Flakes, Unsweetened, optional

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a food processor, pulse the pecans until they reach a sand-like consistency.
- Add the cashews and continue processing until the nuts are well combined
- Add the pitted dates and 2 tablespoons of coconut oil. Blend until the mixture starts to come together and can hold its shape when pressed.
- In a separate bowl, melt the chocolate chips with 2 tablespoons of coconut oil. Stir until smooth
- Using a spoon for even portions, roll the nut mixture into bite-sized balls.
- Dip each ball into the melted chocolate or roll in coconut flakes-your choice!
- Place on a parchment-lined tray and refrigerate until set!
