“WICKED” Candied Popcorn 💚👑🩷 (Edit recipe)

I couldn't help but share a variation of my "Candied Popcorn" for the opening of "Wicked for Good" Movie. The "pink" version is the OG recipe and the "green" variation is below. One batch of PINK, one batch of GREEN -- toss them both together in a large bowl--you're all set for a tasty, candied popcorn experience that pairs perfectly with the movie! This is one of those recipes that I wouldn't suggest subbing ingredients on. This is a nostalgic recipe my mom used to make with corn syrup (not the same as high fructose corn syrup btw) and powdered jello. It is what it is, what can I say. See note below!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your oven to 225°, grab a standard sheet pan and large rubber spatula. Add popcorn to a large heatproof bowl, set aside. If you are popping your own popcorn, be sure to remove any unpopped kernels!
  2. In a small bowl, stir together the jello, butterfuly pea powder and pandan powder (if using) until they are well combined, set aside.
  3. In a heavy bottom sauce pan, melt butter then whisk in the sugar and corn syrup until fully combined. Add jello mixture and whisk again to fully combine.
  4. Bring mixture to a slow boil over medium heat, then reduce heat to low and boil for 2-3 minutes, stirring occasionallly. Watch this pan carefully, if it boils over, you will have a very hot and sticky mess on your stovetop to clean up.
  5. Pour over popcorn and begin gently stirring to coat the popcorn. Be sure to use the spatula to scoop the hot coating that will end up on the bottom of the bowl as you stir. Keep stirring until all popcorn is evenly coated.
  6. Pour onto the baking sheet and use the spatula to spread it out evenly. Place in the oven and bake for 20 minutes, then remove from the oven, stir/toss popcorn and place back in the oven. Repeat that same process two more times at 10 minute intervals for a total of 40-45 minutes.
  7. Cool on the baking sheet then break apart and enjoy! Store in an airtight container or bag.

Notes

I use a LEMON jello, which is YELLOW, so I add the butterfly pea powder (I use Suncore Foods brand) to make it GREEN. I don't care of the artificial lime flavor, which is already green. If you want to use LIME instead, you can skip adding the butterfly pea powder as well as the pandan leaf powder. Totally your call here!

If you want to add some edible glitter, you can sprinkle it on the popcorn after it's been coated with the hot coating.
