Healthy Lasagna Soup
Super easy and cozy lasagna soup recipe that requires minimal ingredients and time. Added ground meat for a boost of protein to create a satisfying meal! This recipe can be made gluten free if you swap the lasagna noodles for a GF noodle
Ingredients
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil

- 1 lb1 lb1 lb Ground Beef (93/7) - Thrive Market, can sub any ground meat

- 1 cup1 cup1 cup White Onion, diced
- 6 cloves6 cloves6 cloves Garlic, minced

- 2 Tbsp2 Tbsp2 Tbsp Tomato Paste

- 2 Tbsp2 Tbsp2 Tbsp Italian Seasoning

- 24 oz24 oz24 oz Crushed Tomatoes
- 1 quart1 quart1 quart Chicken Broth, Low Sodium, can sub beef, turkey or vegetable broth

- 1 Tbsp1 Tbsp1 Tbsp Calabrian Chili Spread, can opt out if you don't want the spice
- 8 oz8 oz8 oz Lasagna Noodles, broken into pieces
- 4 cups4 cups4 cups Baby Spinach
- .5 cup.5 cup.5 cup Basil, Fresh, chopped

- 6 oz6 oz6 oz Mozzarella, Shredded

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- drizzle olive oil in a pot on medium heat and add 1lb of lean beef (or preference)
- add in 1 diced small onion and 6 minced cloves of garlic. let cook until beef is browned
- add 2 tbsp tomato paste and 2 tbsp Italian seasoning, then stir
- bring temp up to high and add 24oz can of crushed tomatoes, 1 container of broth and 1 spoonful of Calabrian chili sauce (optional spice)
- bring to a boil, reduce to a simmer and add in 6-8oz of lasagna noodles broken into pieces (break smaller than you think)
- cook until pasta is al dente
- add 3-4 cups of spinach, handful of chopped fresh basil and 6oz of shredded mozzarella
- stir and done in a few minutes once spinach is wilted
- serve & option to add a dollop or two of ricotta on top!
