Gingerbread Truffles
The easiest NO BAKE 3 Ingredient Gingerbread Truffles just in time for the holidays! The best part is, you can make them ahead of time and freeze them!
Ingredients
- 2.5 cup2.5 cup2.5 cup Gingerbread Cookie, Crushed
- 4 oz4 oz4 oz Cream Cheese, Full Fat, Softened
- 10 oz10 oz10 oz White Chocolate, Melted

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Crush cookies using a food processor or a plastic bag/rolling pin.
- Mix together cookies, cream cheese in a mixing bowl until dough is formed.
- Scoop out 1 tbsp of dough and roll into a ball onto parchment lined baking sheet. Repeat - this should make btw 20-24 truffles.
- Chill in refrigerator for at least 30 mins.
- Melt white chocolate in 30 second intervals, stirring in between.
- Dip each truffle in chocolate with a fork until covered.
- Add optional toppings.
- Allow to completely dry before serving or storing in the fridge.
- Enjoy!
