oven baked organ meatballs
okayyy this is the meal-prep protein staple you need in your repertoire 👀💪
here’s the formula (aka why this works every time):
first, choose your breadcrumb — literally any seed-oil–free chips, crackers, or pretzels (I listed some of my favorites!). season it + grind it into a flour.
next, grind up organ meat sticks (archer farms & lineage provisions are my go-tos!) for the easiest nutrient boost ever (no prep, no fear factor). mix it all with ground meat of choice + cottage cheese. form, roll, bake, & boom đź’Ą
you’ve got oven-baked organ meatballs that are protein-packed, freezer-friendly, wildly customizable, & insanely easy to keep on hand. toss them in bowls, wraps, salads, or whatever floats your boat!

- 2 oz2 oz2 oz Beef Tallow Potato Chips, Classic - Vandy
- 2 oz2 oz2 oz Traditional Tortilla Chips - Masa

- 2 oz2 oz2 oz Fuego Grain Free Puff Snacks - Siete Foods

- 2 oz2 oz2 oz Sweet Potato Chips - Jackson's

- 2 oz2 oz2 oz Grain-Free Pretzel Twists, Tangy Dijon Mustard - Fit Joy

- 2 oz2 oz2 oz Fine Ground Sea Salt Almond Flour Crackers - Simple Mills

- 2 oz2 oz2 oz Cheeze-Pleaze Multi Seed Crackers - Flackers

seasonings
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto

meat mixture
- 2 lb2 lb2 lb Ground Chicken, or ground meat of choice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 400.
- first, choose a “breadcrumb” - aka any seed oil free chips, crackers, pretzels, etc.
- add the “breadcrumb” of choice, monk fruit, & seasonings of choice to a food processor & blitz into a finer crumble.
- to a large bowl, add breadcrumb mixture.
- add meat sticks to your food processor & blend until a crumble forms.
- add meat sticks, ground meat, & cottage cheese to the breadcrumb mixture & combine well.
- using a small cookie scoop, make ~80-100 meatballs.
- place meatballs on a lined baking dish, then bake for ~12-15 minutes.
- to freeze, evenly space meatballs on a sheet pan & freeze → store in an air-tight container & pair with any veggies for a quick, easy meal!
