Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add the cabbage, scallions, cilantro, lemongrass, and garlic, along with grated ginger, to a food processor. Pulse until finely chopped.
  2. Cut the chicken breasts into chunks and add them to the processor along with the soy sauce and rice wine vinegar. Pulse until the mixture becomes smooth and paste-like, scraping down the sides as needed.
  3. Lay out the wonton wrappers and place a small spoonful of filling in the center of each wrapper. Keep a small bowl of water nearby, dip your finger into it, and lightly wet the edges of the wrapper so they seal properly.
  4. Fold the wontons closed, pressing firmly along the edges to seal.
  5. Heat about 1 tablespoon of avocado oil in a non-stick pan over medium heat. Add the potstickers and cook on one side until the bottoms are nicely browned and crisp. Work in batches to avoid overcrowding the pan, and add more oil as needed.
  6. Flip the potstickers and carefully add about ¼ cup of water to the pan. Hold the pan lid like a shield when adding the water; the oil will splatter. Cover immediately and steam for 3–4 minutes, until the chicken is fully cooked through.
  7. Transfer to a plate and serve warm along with your favorite soy dipping sauce.
