baked brie
- 8 oz8 oz8 oz Brie Cheese, one wheel

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
tomato jam
- Add all jam ingredients to a small saucepan, stir to combine. Let mixture set for 4-5 minutes to allow the tomatoes to re-hydrate a bit. Heat over medium low to warm through and thicken a bit, stirring occasionally until reduced slightly and warmed. Set aside.
brie wheel
- Preheat your oven to 350° - then prepare the wheel of brie by cutting the top in a criss-cross pattern by cutting through the rind in 1” sections, cutting about half way down but not all the way through. Rotate around 45° then cut 1” sections to, creating the criss-cross/diamond pattern.
- Place the brie wheel in a small skillet/pan, sprinkle it with salt, adobo seasoning and thyme, then drizzle the top with honey. Bake for 20-25 minutes or until the cheese is bubbly and melty.
- Remove from the oven - re-warm tomato jam if needed and spoon on top of the brie and sprinkle toasted pine nuts with a little sprinkle of adobo seasoning or salt.
- Serve with standard charcuterie offerings and enjoy!
