Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Dice chicken breast into small, bite-size pieces
- Place chicken in a bowl and add orange juice, tamari, Primal Palate seasoning, Kinder’s taco seasoning, smoked paprika, garlic, salt, and pepper
- Rehydrate lemon slices in warm water, then add the slices and a small splash of the lemon soaking liquid to the marinade
- Stir well until chicken is evenly coated
- Cover and marinate in the refrigerator for at least 30 minutes (up to 24 hours for more flavor)
- Heat a large skillet over medium heat and lightly oil
- Add marinated chicken (including lemon slices) and cook, stirring occasionally, until chicken is cooked through and lightly caramelized
- Reduce heat slightly if needed and let excess liquid cook off so the chicken browns.
- Warm tortillas in a dry skillet or directly over a flame
- Assemble tacos with chicken, guacamole, lettuce, onion, cilantro, and cheese
Notes
Orange juice adds natural sweetness and helps the chicken caramelize—keep heat at medium so it doesn’t burn Smaller chicken pieces = faster cook time and better taco texture Great for meal prep: cooked chicken keeps well in the fridge 3–4 days Swap tortillas for lettuce cups or bowls for a lower-carb option Leftovers are perfect for taco salads, quesadillas, or rice bowls
