Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Heat a skillet over medium heat. Add chopped Canadian bacon and cook, stirring occasionally, until deeply golden and crisp, about 6–8 minutes. Transfer to a paper towel–lined plate and set aside.
  2. Pat the beef cubes dry. Toss with avocado oil, Steak Seasoning, Meat & Potatoes Seasoning and sea salt until evenly coated.
  3. Heat a large skillet over medium-high heat. Add the beef in a single layer (work in batches if needed) and sear for 2–3 minutes per side until deeply browned. Remove beef from the pan and set aside.
  4. Reduce heat to medium. Add garlic and shallot to the same skillet and sauté for about 1 minute, until fragrant. Stir in the tomato paste, crushed cherry tomatoes, and crushed grapefruit slice.
  5. Pour in the beef broth and soy sauce. Add lime juice, honey (or maple syrup), and Adobo Seasoning. Simmer for 5–8 minutes, stirring occasionally, until the sauce thickens into a glossy, sticky glaze.
  6. Return the seared beef to the skillet and toss until fully coated in the glaze and warmed through.
  7. In a small pot, whisk together the corn milk, lime juice, Adobo Seasoning, and a pinch of salt if needed. Simmer on low for 10 minutes. Let sit for 5 minutes to lightly thicken.
  8. Transfer the glazed beef bites to a serving platter or board. Drizzle with the Maizly crema, sprinkle generously with Canadian bacon crunch, and finish with finely chopped chives if using.
  9. Serve warm and enjoy.

Notes

If your maizly crema isn't thickening to your liking, you can always add a slurry of: 1tsp water and 1tsp Primal Palate Gluten Free Flour whisked together. This helps thicken the sauce while keeping all the flavors in tact.
