High Protein Keto Raspberry Chocolate Cottage Cheese Mug Cake
This high protein keto raspberry chocolate cottage cheese mug cake is my little solution for nights when my sweet tooth shows up loud, and I do not want a whole cake in the house. It is a single-serve, real-food, high protein keto dessert made with cottage cheese for a higher-protein, richer texture. It is chocolatey, warm, and finished with raspberries, and it’s done in about 2 minutes in the microwave.
Ingredients
- 3 Tbsp3 Tbsp3 Tbsp Cottage Cheese, full-fat
- 111 Egg, large
- .5 tsp.5 tsp.5 tsp Vanilla Extract, sugar free

- 2 Tbsp2 Tbsp2 Tbsp Almond Flour

- 1 Tbsp1 Tbsp1 Tbsp Cocoa Powder, unsweetened

- 2 Tbsp2 Tbsp2 Tbsp Granular Sugar Substitute - Swerve
- .5 tsp.5 tsp.5 tsp Baking Powder

- .125 tsp.125 tsp.125 tsp Salt

- 2 Tbsp2 Tbsp2 Tbsp Raspberries, Organic
- 1 Tbsp1 Tbsp1 Tbsp Dark Chocolate Chips, (optional)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
Microwave option
- Blend the egg, cottage cheese, and vanilla until smooth (no visible curds).
- Add the almond flour, cocoa powder, sweetener, baking powder, and salt. Blend again until thick and pourable.
- Lightly grease a microwave-safe mug (10 to 12 oz) and pour in the batter.
- Add the raspberries on top and gently press them in slightly. Do not mix.
- Microwave for 120 seconds until the center looks set (not shiny). If needed, microwave 10 to 15 seconds more.
- Rest for 1 minute, then serve.
Oven option
- Pour the batter into a greased ramekin.
- Top with raspberries and gently press them in slightly. Do not mix.
- Bake at 360°F (180°C) for about 12 minutes until the top looks set and the center is no longer wet.
Notes
Do not mix the raspberries into the batter. Add them last and only press in slightly. They sink if stirred, and the cake can turn wetter. The oven version bakes up more cake-like. Frozen berries work, but they can make the mug cake wetter. Jam option: use about 1 tablespoon of sugar free raspberry jam. Spoon on top and lightly press in. Optional chocolate chips are not included in the nutrition.
