Creamy Farro Salad with Cornmilk Dressing
This creamy farro salad brings together nutty farro, sweet raisins, roasted pine nuts, and fresh parsley for a simple dish with great texture and flavor. Everything gets tossed in a silky cornmilk dressing made with garlic, lemon juice, salt, and pepper. The cornmilk adds a gentle creaminess and subtle sweetness that coats the farro beautifully.
Serve it warm or chilled. It’s a hearty side dish, but satisfying enough to enjoy on its own.

- Add the pine nuts to a dry nonstick pan over medium-low heat. Toast for about 5 minutes, shaking the pan occasionally, until lightly golden and fragrant. Set aside.
- Cook the farro according to the package directions, using chicken broth instead of water.
- In a bowl, whisk together the cornmilk, pressed garlic, lemon juice, salt, and pepper.
- Add the cooked farro to a large bowl. Stir in the raisins and toasted pine nuts. Season with a little more salt and pepper to taste.
- Pour the cornmilk dressing over the farro mixture and stir to combine. Let the salad sit for about 5 minutes so the farro can absorb the dressing and become creamy.
- Stir in the chopped parsley.
- Serve warm, or refrigerate and serve chilled.
Notes
Use about 2 tablespoons of parsley for a lighter herb flavor, or more if you love a fresh, herby finish.
