Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Place a large pot over medium heat and add olive oil. Work close to stove, adding veggies in order listed on ingredients.
  2. Add bay leaves and season veggies with salt and pepper. Add stock and bring to a boil. Add diced chicken, return to a boil and then reduce heat to medium. Cook chicken for 2 minutes. Add noodles of choice (we love pastina or acini de pepe) and cook soup for an additional 6 minutes or until noodles are tender.
  3. Remove soup from heat. Stir in fresh parsley and dill. Remove bay leaves. Serve with lots of cheese.

Notes

This is a really thick soup, your noodles will soak up most of the liquid. If you’re going to save some for later I do suggest cooking the pasta in a separate pot and adding at the time of serving. You can also add water or more stock if you want more broth!
