High Fibre Carrot Cake Muffins
These carrot cake muffins are the perfect, healthy snack you can meal prep for the week. They are refined sugar-free, and packed with fibre from the ground flaxseeds, carrots, and Maizly corn milk!
Ingredients
- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup

- 0.5 cup0.5 cup0.5 cup Cornmilk - Maizly

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 0.25 cup0.25 cup0.25 cup Applesauce, Unsweetened
- 3 Tbsp3 Tbsp3 Tbsp Plant-Based Greek Style Yogurt
- 1 whole1 whole1 whole Flax Egg (1 tbsp ground flaxseed + 2.5 tbsp filtered water)
- 1 cup1 cup1 cup Carrots, shredded
- 1.333 cup1.333 cup1.333 cup All Purpose Flour
- 1 tsp1 tsp1 tsp Baking Powder

- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 2 tsp2 tsp2 tsp Cinnamon, Ceylon

- 0.5 tsp0.5 tsp0.5 tsp Nutmeg Powder
- 0.5 cup0.5 cup0.5 cup Pecans, chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350F.
- Spray a silicone muffin tray with avocado oil and set aside.
- To a large bowl, add all wet ingredients including shredded carrots and mix with a whisk until well combined.
- Add all dry ingredients except chopped pecans to the wet mixture and combine with a spatula. Fold in chopped pecans until just combined.
- Use a scooper to spoon the batter evenly into the 12 muffin liners.
- Top with extra pecans and cinnamon, then bake for about 30 minutes or until muffins have puffed up and are slightly golden on the edges and center.
- Remove from the oven, let cool, then optionally top with dairy-free cream cheese frosting, more crushed pecans and shredded carrots.
Notes
How to store: Place muffins in an airtight container and store in the fridge for up to one week. How to freeze: You can freeze these muffins (without the cream cheese frosting) for up to 3-4 weeks in an airtight container.
