Irish Soda Bread
Even though I’ve got no Irish blood I now fully buy in to the “everybody’s Irish on St. Patrick’s Day” mentality. ☘️🇮🇪🤍
Ingredients
- 4 cups4 cups4 cups All Purpose Flour, Spooned & leveled
- 0.333 cup0.333 cup0.333 cup Granulated White Sugar

- 1.5 tsp1.5 tsp1.5 tsp Baking Soda
- 2 tsp2 tsp2 tsp Kosher Salt

- 2 Tbsp2 Tbsp2 Tbsp Butter, Salted, Cold

- 0.25 cup0.25 cup0.25 cup Vegetable Oil
- 1.5 cups1.5 cups1.5 cups Buttermilk
- 111 Egg
- 111 Egg Yolk
- 1.5 cups1.5 cups1.5 cups Blackcurrants

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 425 degrees F.
- Plump your currants. This step is optional. If you aren’t using dried fruit you can skip completely, but I think rehydrating your currants makes the bread so much better! Just boil a small pot of water. When it reaches boil, turn off heat and add the currants. Place a lid on and let sit for 10 minutes. Drain into a colander.
- Sift your flour using a mesh strainer.
- Add sugar, baking soda, and kosher salt to the flour.
- Use a pastry cutter to add cold butter to the flour mixture.
- In small increments add vegetable oil to the flour mixture, continuing to use the pastry cutter to combine.
- Add your currants (raisins or chocolate chips would be great too!). Toss them up in the flour.
- In a glass measuring cup, add your buttermilk, egg and egg yolk. Whisk until fully combined.
- Add the liquid mixture to the flour mixture with a rubber spatula.
- Turn the dough onto a floured surface. Flour your hands a bit and knead just once or twice, shaping into about a 7 inch circle. Don’t over-knead!
- Spread butter on a cast iron skillet. Transfer the loaf to the skillet.
- Bake for 20 minutes uncovered, then cover with foil and bake for another 35 minutes. Overall, it’ll take about 50-60 minutes.
