- 1 pinch1 pinch1 pinch Salt and Pepper
- 1 cup1 cup1 cup Pasta Water
- 2 Tbsp2 Tbsp2 Tbsp Parsley, chopped

- 0.25 cup0.25 cup0.25 cup Pistachios, Roasted, chopped, slightly toasted

- Bring a large pot of well-salted water to a boil. Add the pasta and cook until al dente.
- While the pasta cooks, in a large mixing bowl, whisk together the ricotta, Parmesan, lemon juice, nutmeg, salt, and pepper until smooth.
- Before draining the pasta, reserve 1 cup of the starchy pasta water.
- Add a few tablespoons of warm pasta water to the ricotta mixture and whisk until silky and loosened. Continue adding small amounts until the sauce reaches a smooth, creamy consistency.
- Drain the pasta and immediately transfer it to the bowl with the ricotta mixture. Toss until evenly coated. Add additional pasta water as needed to help the sauce cling to the noodles.
- Transfer to a serving bowl or plate individually. Sprinkle with chopped parsley, toasted pistachios, extra Parmesan, and a light dusting of lemon zest.
- Serve immediately.
