The oxtail is the tail of the cow that is skinned and cut into sections. Oxtail is a high-gelatin, flavorful, hard-to-find cut that is wonderful stewed or slowly braised until the meat is fork-tender. Great in a slow cooker or on the stovetop, with lots of nutrients.
