Autumn Apple Salad w/ ACV Vinaigrette
I love pairing fruit with spicy arugula and a crisp apple is one of my favorites! Combining that arugula with equal parts baby spinach is such a great combo, but if you want all arugula, go for it! I’m using Argilos IV Olive Oil and added one of my new favorite spice blends, Lakehouse Shallot & Herb, it’s so delicious!
Ingredients
vinaigrette
- .75 cup.75 cup.75 cup ARGILOS IV MILD Extra Virgin Olive Oil (500ml) - Argilos

- .5 - .75 cup.5 - .75 cup.5 - .75 cup Apple Cider Vinegar

- 1 Tbsp1 Tbsp1 Tbsp Caramel Apple Simple Syrup (click for recipe), can sub honey as needed
- 2 tsp2 tsp2 tsp Dijon Mustard

- 1 tsp1 tsp1 tsp Lakeshore Shallot & Herb - The Spice House, can sub garlic powder as needed

- .5 tsp.5 tsp.5 tsp Signature SALT - am.Niccoli

- .25 tsp.25 tsp.25 tsp Black Pepper

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Chives, fresh, finely chopped
autumn salad
- 2 cups2 cups2 cups Arugula
- 2 cups2 cups2 cups Baby Spinach
- 1 whole1 whole1 whole Apple, Pink Lady, medium, cored, thinly sliced
- 1 whole1 whole1 whole Shallot, small, thinly sliced
- .33 cup.33 cup.33 cup Almonds, Sliced, or nut of choice

- .33 cup.33 cup.33 cup Dried Cranberries, Organic
- .25 tsp.25 tsp.25 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add all vinaigrette ingredients, except the chives, to a narrow jar. With an immersion blender, whirl until well combined and emulsified. Add fresh chives and stir, set aside while you assemble the salad.
- Add arugula and spinach to the serving platter, tossing to combine. Arrange/tuck apple slices and sliced shallots evenly with the greens . Sprinkle almonds and cranberries on top then fresh cracked pepper evenly on top.
- Stir dressing, then drizzle over the salad, toss and serve!
