I love pairing fruit with spicy arugula and a crisp apple is one of my favorites! Combining that arugula with equal parts baby spinach is such a great combo, but if you want all arugula, go for it! I’m using Argilos IV Olive Oil and added one of my new favorite spice blends, Lakehouse Shallot & Herb, it’s so delicious!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add all vinaigrette ingredients, except the chives, to a narrow jar. With an immersion blender, whirl until well combined and emulsified. Add fresh chives and stir, set aside while you assemble the salad.
  2. Add arugula and spinach to the serving platter, tossing to combine. Arrange/tuck apple slices and sliced shallots evenly with the greens . Sprinkle almonds and cranberries on top then fresh cracked pepper evenly on top.
  3. Stir dressing, then drizzle over the salad, toss and serve!
